Harvest period
The harvest is done by hand and the olive fruit is placed in open baskets that allow the fruit to "breathe". It begins in mid-October, when the fruit is still green, resulting in high-quality olive oil that maintains its unique characteristics and flavor.
Oil production
100% from koroneiki olives and cold pressed. To ensure the highest purity and quality, the olives are not allowed to exceed 27 degrees Celsius during the entire process.
Storage
The oil is stored in suitable stainless steel tanks to ensure its freshness and avoid oxidation.
Taste
It has a nice green color and a special fruity taste that leaves a slightly burning and soft aftertaste. Astro Premium extra virgin olive oil has an acidity level of less than 0.3%.
